Me (Mary) and my younger sister (Celine) decided to start a cooking blog with photos and recipes to share the lovely food we bake, cook and eat!
I’ll start off with the recipe for the cute cupcakes featured in our blogs header.
Celine baked these for my 21st birthday party, and I helped decorate them with her.

Coconut Cupcake
Although this is originally a cake recipe, we’ve found that it makes a lovely moist cupcake with a nice flavour.
What you need:
- 125g butter or margarine (I prefer butter as it gives a nicer flavour)
- 3/4 cup white sugar
- 2 eggs
- 1 cup self raising flour (or plain flour with baking powder added – check your baking powder tin for more directions)
- 1/2 cup coconut
- 1/3 cup milk
Step 1 : Cream the butter and sugar together in a bowl.
Set your oven to bake at 180C
Step 2: Add in the two eggs, coconut and milk, mix.
Step 3: Fold in the flour.
Step 4: Share the mixture into pattycakes and bake in the oven for about 15 minutes, or until they look cooked!
Step 5: Ice and decorate! (I usually make up icing by combining icing sugar, some hot water and a little butter and mixing until it reaches a nice consistency.

Enjoy!
