Me (Mary) and my younger sister (Celine) decided to start a cooking blog with photos and recipes to share the lovely food we bake, cook and eat! 🙂 

 I’ll start off with the recipe for the cute cupcakes featured in our blogs header. 
Celine baked these for my 21st birthday party, and I helped decorate them with her.  


Coconut Cupcake
Although this is originally a cake recipe, we’ve found that it makes a lovely moist cupcake with a nice flavour.

What you need:

  • 125g butter or margarine (I prefer butter as it gives a nicer flavour)
  • 3/4 cup white sugar
  • 2 eggs
  • 1 cup self raising flour (or plain flour with baking powder added – check your baking powder tin for more directions)
  • 1/2 cup coconut
  • 1/3 cup milk  

Step 1 :   Cream the butter and sugar together in a bowl.
                  Set your oven to bake at 180C

Step 2:    Add in the two eggs, coconut and milk, mix.

Step 3:    Fold in the flour. 

Step 4:    Share the mixture into pattycakes and bake in the oven for about 15 minutes, or until they look cooked! 😀

Step 5:   Ice and decorate!  (I usually make up icing by combining icing sugar, some hot water and a little butter and mixing until it reaches a nice consistency.
